This recipe is a great way to introduce kids to healthy, juicy, delicious jicama, which is a healthy alternative to chips and is allergy friendly.
Ingredients
Fresh jicama
Black olives (or red grapes)
Prepared organic black bean dip (can be found at grocery store, or make your own)
Fresh cilantro
Directions
Peel jicama and cut into ¼-inch slices
Cut out ghost shapes (freehand with knife or use a cookie cutter)
Use sliced olives or grapes for eyes and mouth
Serve black bean dip and cilantro garnish
Have extra slices of fresh jicama ready in a bowl because the kids will gobble up these delicious and friendly jicama ghosts!
