SNOWMAN CAPRESE "SALAD"
Have the kids help "build a snowman," a healthy afterschool snack or edible party activity! This snowman caprese "salad" is a great way to introduce organic basil to kids, and is perfect for anyone with a nut allergy. Create “snow” by garnishing the plate with a few pinches of sea salt and pepper, or a drizzle of oil and vinegar.
INGREDIENTS
1 ripe organic tomato
1 block mozzarella cheese
3 fresh, organic basil leaves
3 black olives
Optional: 1 piece fully cooked, no-nitrate bacon
DIRECTIONS
Slice tomato and cheese. Then, using three different sized circle cookie cutters, make circles with tomato and cheese (one of each size).
Place tomato circles on plate and cheese circles on top of tomato, in snowman shape.
Place basil leaves at the top of each circle (snowman's hat, scarf and belt).
Cut one olive in half for the boots.
Push a straw through remaining olives to make eyes and buttons (great job for kids).
Push a straw through small piece of cheese to make the puff on the hat.
Use a small scrap of tomato for the smile.
Optional: Cut slivers of bacon to make arms.
Did you know? Caprese salad is made of only three fresh ingredients with purposeful color. Red, white and green are the colors of the Italian flag.
